I admit it: I am guilty of slipping in to a dining rut from time to time. That’s why I always look forward to this time of year when restaurants lure locals and visitors alike to their tables with offers of two for one entrées and other delightful discounts. It’s the perfect time to remove yourself from your comfort zone and experience a multitude of Park City area restaurant options without breaking the bank. That’s exactly what we did when we decided to check out Escala Provisions Company,  widely known as “EPC”, Located in the Hyatt Centric  within the Canyon’s village area of Park City Mountain Resort, and enjoy dinner before heading to a show in Park City.

You’ll note you’ve entered an uber hip spot the moment you step in to the dining room. Comfortable and contemporary, you’ll feel like you could be in any urban setting…and then you realize you’re lucky enough to be amidst the trees and ski runs at Canyons Resort. Open currently for breakfast and dinner (lunch available in June), diners enjoy locally sourced comfort food served up filled with unique flavor. We headed in for dinner with two for one coupons in hand! It was too chilly to sit outside, however EPC does have a deck that I am looking forward to checking out in warmer weather. With plenty of hand-crafted cocktails and a nice wine and beer menu to choose from, we ordered up our favorite beverages while enjoying the contemporary fireplace and relaxed vibe awaiting our food to be delivered.

A Menu Built on Locally Inspired Fare

The chef graced us with a complimentary starter as a thank you for coming up to try EPC for the first time – a welcomed and delicious gesture! We all enjoyed the house-made chorizo fritters. Fluffy and flavorful, it was just the right pre-dinner taste.  Being a midwesterner to the core, next time I’m going for the fried cheese curds for sure! Next up, we all split their heirloom tomato salad with brioche croutons, arugula and smoked tomato vinaigrette. The peppery arugula was the perfect accompaniment to the sweet and juicy tomatoes and the smokiness of the dressing added to the perfect layers of flavor. Onward to the main course! We were all delighted with our selections, which ranged from the pan seared trout to the vegetable flatbread. Needless to say, there’s something for everyone. The trout was prepared to perfection with fingerling potatoes and a grapefruit butter sauce. A favorite of the group was the grass-fed burger served alongside crispy fries. Smothered in white cheddar and topped with tomato jam and house made pickles, again the layers of flavor were executed flawlessly. Want to really go for it? Add bacon and a cage free egg to your burger for a few extra bucks. Simple and elegant from presentation to execution, we are adding this to our repertoire of must-eat-at places in the Park City dining scene. A little off the beaten path, Escala Provisions Company makes the drive up to Canyons completely worthwhile!
