This week our Après Affection is all about Baja Cantina. This favorite of locals and visitors alike, is a stone’s throw from the lifts at the base of Park City Mountain Resort. The owners have been proudly serving their original California-Mexican cuisine to Park City, since 1983. We love that the owners are still the same, and that they have kept it in the family with their son helping to run the show at Baja, as well as at another of our favorite, their sister restaurant Bistro 412. They have graciously shared with us the recipe for their popular Enchilada’s Santa Fe, so you can enjoy at home, when you aren’t there enjoying it for après!
Ingredients
- 12 6” flour tortillas
- 1 12-15 oz. red enchilada sauce
- 6 oz. spinach
- 6 oz. cream cheese
- 1 large red onion, diced
- 2 ripe tomatoes, diced
- 1 lb. jack & cheddar cheese
- 2 lbs. boneless chicken breasts
Instructions
- Dice chicken into ½ inch chunks
- Sauté chicken with a pinch of garlic, pepper, salt and olive oil
- Spread cream cheese on tortilla, and top with diced onion, tomatoes, spinach and chicken
- Roll tortillas and top with enchilada sauce, jack & cheddar cheeses
- Bake at 350 degrees for 20 minutes, or until the cheese is melted
