Après Affection- Collie’s

This week our Après Affection is all about Collie’s Sports Bar & Grill. Everyone know Collie’s is the perfect location for every sports event viewing you can imagine, as well as a great spot across from the Town Lift of Park City Mountain Resort for après festivities. But, what you may not know is about the delicious Southern inspired food they are dishing up daily.

 What we noticed is that first and foremost, Collie’s is all about family. General Manager and part owner (along with his parents), David Wakeling, procured Collie’s about four years ago.  He, like many, was an east-coaster who grew up spending winter vacations on the slopes of Park City. He and his parents, who officially moved out from back east two years ago, decided Park City was the perfect place for all of them to settle after years visiting.  After searching for a business location, they discovered Doolan’s Sports Bar, and the rest is history.

Bringing the love of food from places you’ve lived and worked is precisely what David, his family, and chef Rob believe in. David met chef Rob more than 10 years ago in Grand Targhee, Idaho, and formed a strong friendship.  They maintained that friendship after David moved to Charleston to attend the Art Institute, while working at high end restaurants. When the concept of Collie’s came about, he reached out to Rob, then living in Colorado to see if he could be involved.

Rob decided to come to Park City to do some research on bars and restaurants in the area to determine what cuisine and dishes really were needed.  When he researched the previous tenants of the sports bar, he realized previously every item on the menu was frozen, boxed or canned. In addition, the kitchen and dining room were in need of a complete overhaul. So, once he decided to join the team, they went to work and transitioned the menu into all fresh ingredients, with a Southern flare.

They decided that Park City really could use some more barbecue, specifically southern style.  So, they bought a smoker and started doing research and testing.  They began by using apple-wood chips, which removes the bitterness that hickory or mesquite may have.  This became the basis of their delicious fare they offer today.
In fact, chef Rob serves up his tasty “Bobecue Sauce” daily, which he wrote the recipe for 11 years ago.  The flavors of the sauce little bit of everything- liquid bacon, sweet, savory, smoky.  They even sell to-go mason jars of the sauce, should you fall in love with it like we did.
Their motto, “Where good food is Herding People Together.” couldn’t be more fitting of their business.  So be sure to head into Collie’s for your next lunch, après, dinner, or sports-watching adventure (offering up 25 flat-screen TVs).  Be sure to try some of our favorites below!

St. Louis Ribs
