I’m a pseudo-vegetarian and also don’t like eggs, so breakfast can be a challenge for me. The tofu options at Squatters make breakfast with my carnivore-loving husband easy. ~Allison Arthur, Dishing Editor
Start your day on the right foot, with the protein, but minus the meat, with the tofu scramble from Squatters…
Ingredients
- 3/4 cup celery, minced
- 3/4 cup onion, minced
- 1/2 bunch fresh Italian parsley, minced
- 1/2 tablespoon fresh garlic, minced
- 1/2 tablespoon canola oil
- 1/2 tablespoon olive oil
- 1/2 cup vegetable stock
- 1/2 teaspoon black pepper
- 1/2 tablespoon onion powder
- 1/2 teaspoon thyme
- 1/2 teaspoon blackening spice
- 1/2 teaspoon turmeric
- 1/2 teaspoon tarragon
- 12 ounces firm tofu, strained
Instructions
- In a deep saute pan, saute all ingredients, except tofu, until onions soften.
- Crumble in tofu and simmer for an additional 20 minutes until cooked through.
