Booze Baking Pink Lady Sugar Cookies

For those of us who enjoy our libations, we are lucky that Park City is home to some seriously passionate brewers, distillers and alcohol connoisseurs. High West Whiskey, Vida Tequila and now Jack Rabbit Gin are some amazing products that are made within 30 miles of my own home and aside from its locality, all three are truly some of the best of their kind.

When it comes to the botanical juniper beverage of gin, the booze hounds over at Beehive Distillery are putting out a seriously delicious product. The first legal gin made in Utah since 1870, the makers’ passion and excitement alone will make you want to try their gin. The process of making gin is much more complex than many might think, but through the creative process, these guys have put their stamp on the product and have definitely nailed it. The amount of botanicals used in the recipe is what makes the flavor so unique and bold. The first time I tasted it (and I don’t love gin) it was the only time I can ever say I’ve casually sipped on gin and loved every sip. It’s smooth and has so much more depth than you’d think. I was so happy when Beehive put out this sugar cookie recipe. It’s such a creative idea and adds just a perfect amount of a floral, juniper-y flavor. So, chilled in a glass? Amazing. Add it so some soft and chewy sugar cookies? Oh wow.

Beehive Gin Pink Lady Sugarcookies

Ingredients

  • For the cookies
  • 1 cup unsalted butter, softened
  • 1.5 cups sugar
  • 1 egg
  • 2.5 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon vanilla
  • 2 tablespoons Jack Rabbit Gin
  • Zest from half a lemon
  • For the frosting
  • 1 stick (1/2 cup) butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons Jack Rabbit Gin
  • 2 tablespoons Grenadine (or pomegranate juice, for those who don't like their butter cream too sweet)
  • 1 drop red food coloring (for those who like it pretty)

Instructions

  1. In a bowl of an electric mixer, cream together butter and sugar until fluffy, about 3 minutes. Add egg and continue beating until well combined.
  2. On low speed, gently mix in flour, baking soda, baking powder, salt, vanilla, Jack Rabbit Gin and lemon zest.
  3. Chill dough in refrigerator for 3 hours.
  4. Preheat oven to 350 F. Line cookie sheets with parchment paper.
  5. Remove dough from fridge and roll, by the tablespoonful, into a ball. Place dough onto baking sheet, spacing about 2 inches apart. Bake until barely browned, about 9 to 11 minutes.
  6. Cream butter in bowl of electric mixer. Add powdered sugar, gin, Grenadine and food coloring (if using) and mix slowly
  7. Once combined, turn mixer to high and beat until light and fluffy, about 2 minutes.
  8. Spread frosting on cookies; a little goes a long way!
  9. Makes 36 cookies
