Deer Valley Winter Menu Tasting

Everyone wants my job. And I will admit, it’s a pretty cool job. Some days, though, you go through food fatigue, just too much good food all the time. But when Deer Valley calls to invite you to their winter menu tasting for all restaurants, you tell your belly to saddle up, cause this is going to be one good ride.

Carved orange-spiced rub boar leg with persimmon and gooseberry sauce, polenta fries with a smoked tomato aioli, roasted romanesco, baby purple carrots, fresh herbs, brown butter from Fireside Dining.

Hosted each year at Empire Lodge, home to Fireside Dining in the winter, Deer Valley pulls out all the stops to showcase the culinary crafts at their signature restaurants. The evening began with passed appetizers of wood-fired flatbreads from The Brass Tag paired with creative featured cocktails for the season.

Salmon rillettes with citrus roe, fine herbs and house-made rye bread from Goldener Hirsch.

Deer Valley has 17 different dining experiences that have you covered from morning till night. Start at Deer Valley Grocery Café, or Snow Park Restaurant and fuel up for a day on the slopes. There are so many options for lunch, it’s hard to mention all, but a local’s favorite is hanging at “The Beach” at Snow Park Restaurant or hitting Empire Canyon Grill. For the best sit-down experience, don’t miss a lazy lunch at Royal Street Café.

Elk and short rib chili with toasted coriander, créme fraiche, Gold Creek Farms drunken cheddar at Royal Street Café.

For evening dining, you can’t go wrong with Fireside Grill, serving up roasted meats, hearty stews and raclette, served in front of a roaring fire with all the accoutrements. If you are missing the sea, partake in the Seafood Buffet at Snow Park. It’s a cornucopia of fresh seafood, and it’s all you can eat. The Brass Tag has an upscale relaxing atmosphere, and is the epitome of “casual” Deer Valley dining.

Gingerbread gianduja torte with lemon mousse, hazelnut toffee, d’anjou pear sorbet from Goldener Hirsch

New to the Deer Valley experience is Goldener Hirsch. Set mid-mountain by Silver Lake Village, Goldener Hirsch is a long-time staple restaurant for those looking to have a cozy, intimate experience. Recipient of the AAA-Four Diamond Award and the Wine Spectator Award of Excellence, the Goldener Hirsch restaurant offers exquisite contemporary Alpine cuisine with a seasonal American spin. Enjoy unique appetizers, including the ever-popular cheese fondue, seasonal soups and salads, creative entrées including the classic Wiener schnitzel, seared meats and fresh fish.

House-cured lox, pickled red onion, heirloom cherry tomato, caper berries, fresh dill, fennel pollen and chive cheese with house-made wild rice harvest toast and chocolate brioche from Deer Valley Grocery Café.

In true Deer Valley style, we didn’t go home empty handed. The Deer Valley Grocery Café is known for their amazing breakfasts and equally as amazing lunches. All packed up in a picnic basket was this nice little reminder that the previous evening was not a dream, but quite a reality.
