Mindful Cuisine Cooking Class: Celebrate Spring

Enjoy creating this meal that celebrates the bright fresh flavors and colors of spring. Peas, spinach and strawberries are all in season at their peak flavor, and will make perfect accompaniments to the mustardy chicken – boned, marinated, grilled. The Pecorino Pudding is light like a soufflé, but without the scary “rising and falling” part; it can also be made ahead of time. The soft “egg on top” will be from Mindful Cuisine’s own chickens. The Strawberry Skillet Cake for dessert is delicious and so easy to make – enjoy making it whenever you have great strawberries!
