No need to heat up the kitchen to enjoy this cool cucumber soup from Deer Valley Grocery Café. Artfully blending herbs and spices brings out the flavor of fresh English cucumbers. Add chilled, poached shrimp and a stick of olive oil bread from Red Bicycle and you have yourself a refreshing summer meal.
- 1 cup chopped scallions
- 6 English cucumbers
- 2 jalapeño peppers, chopped with seeds and stems removed
- 2 cups basil leaves
- 1 cup mint leaves
- 1 bunch of cilantro, stemmed
- 1/4 cup grated ginger
- 1/3 can coconut milk
- 1/3 cup lime juice
- 2 cups apple juice
- black sesame seeds
- Add all ingredients but the sesame seeds to a blender and blend until very smooth.
- Salt to taste.
- Garnish with black sesame seeds.
