710 Bodega on Main’s Walnut Sherry Dressing


  • 1/2 cup walnuts
  • 1 cup sherry vinegar
  • 1/2 cup honey
  • 1/4 cup Dijon mustard
  • Warm water
  • 2 cups olive oil
  • Salt and pepper to taste


  1. Toast the walnuts until golden brown and let cool.
  2. In a blender, add the walnuts, sherry vinegar, honey and mustard.
  3. Blend into a paste.
  4. If it is too thick, add water until liquefied.
  5. Then add the oil until emulsified.
  6. Add a little more warm water if the mixture is too thick.
  7. Season with salt and pepper to taste.
