Avocado, Tomato & Spinach Bagel Sandwich

Bagels aren’t just for breakfast. I was looking for a quick, healthy(ish) and hearty lunch, and this bagel sandwich from Park City Bread & Bagel hit the spot.  My specific order was a whole grain bagel, toasted with a little butter, avocado, tomato slices and fresh spinach.  Yum!

You can make your own creation as I did, or try any of their delicious menu items.  Here is another fantastic Meatless Monday option off the menu:

Eggplant and mushroom grilled paniniGrilled eggplant, roasted red peppers, caramelized onions, portabella mushrooms, pesto and mozzarella cheese on focaccia

For something lighter, they also offer a portabella garden salad, strawberry feta salad or soup and bagel option

Lunches at Park City Bread & Bagel are great for on the go, but if you’re not in a rush, I recommend ordering your sandwich with a soy chai latte and relaxing by their cozy fireplace.  They have two convenient locations in Kimball Junction (the newest) and Quarry Village in Pinebrook.
