Oodles of Noodles

We here at Dishing have a definite affinity for some noodles, especially of the Asian variety.  And lucky enough for us, we have a plethora of places to enjoy a variety of noodles from all different origins.

Below is a great beginners guide to Asian noodles from Epicurious:
UDON-
Made with:
Wheat flour. Where you’ll find it most often: Japan, specifically in Takamatsu, where you can flag an udon taxi. Ideal temperature: Hot or cold. Good for: Noodle soups, lighter stir fries.

RAMEN-
Made with:
The instant version has all kinds of additives, but authentic ramen is flour, baking soda, and water. Where you’ll find it most often: Japan, where there are over 20 regional and textural styles of ramen noodles. Ideal Temperature: Hot. But don’t wait—eat those noodles fast! Good for: Soups.

VERMICELLI (RICE)-
Made with:
Ground rice. Where you’ll find it most often: Vietnam (in soups), Malaysia (in street food stir-fries), and India (in desserts). Ideal Temperature: Hot. Good for: Pho, noodle soups, and garnishes.

LO MEIN-
Made with:
Wheat, egg, salt, and other additives sometimes included. Where you’ll find it most often: Chinese (mostly Cantonese) and American Chinese dishes. Ideal Temperature: Hot Good for: Stir fries with shrimp, beef, or chicken.

EGG-
Made with:
Wheat, egg, salt, lye water, corn starch. Where you’ll find it most often: Malayasian, Chinese (esp. Cantonese), and American Chinese food. Ideal Temperature:Hot. Good for: Stir fries.

SOBA-
Made with:
Buckwheat. Where you’ll find it most often: Japan, mostly, with fresh buckwheat zaru soba. Ideal temperature: Chilled. Good for: Cold salads, light soups.

PAD THAI-
Made with:
Ground rice. Where you’ll find it most often: Thailand. Ideal Temperature:Hot Good for: You guessed it.

Pork Belly Noodles- 
Roasted pork belly. slow poached egg, naruto (fish cakes), seasonal vegetables, scallions and nori

Chili Beef Noodles- Seared sirloin steak, bean sprouts, seasonal vegetable, red chiles, red onions and scallions
