Heirloom American food forged by the power of flame. At Firewood, celebrated local chef John Murcko is at the forefront of a national trend and firing up regionally sourced cuisine over an open flame. The centerpiece of this show kitchen is a 14-foot custom grill, where everything is prepared with a smoker, flame or embers and infused with flavors from apple, oak or cherry wood. Think Arctic char with fire-roasted clams or ember-roasted cauliflower salad. But not everything has a flame-fired taste. Some dishes may only have a subtle hint of smoke (desserts are prepared with a regular stove). This recently renovated Main Street space is equally impressive for its design, which Murcko and his father dreamed up — and built much of — themselves. Leather, exposed hardwood and forged steel serve as the backdrop to this cozy-feeling restaurant. This is a Park City must-see. Don’t miss a visit to the Nickel Bar downstairs.
