The St. Regis Deer Valley Introduces New Head Chef

The St. Regis Deer Valley, the AAA Five Diamond resort located on the slopes of the Utah’s Deer Valley Resort, has appointed Rachel Wiener as executive sous and chef de cuisine at Jean-Georges Vongerichten’s J&G Grill.

In her new role, Wiener will oversee menu planning for the restaurant, award-winning wine dinners and the St. Regis Bar, which features light fare created by Vongerichten. Chef Wiener has been with The St. Regis Deer Valley for three years, most recently as the Sous Chef at J&G Grill.

“I’m honored to be a member of the extremely talented culinary team at The St. Regis Deer Valley,” Wiener said. “My passion for food comes from growing up in a Hungarian and Indian household where my parents loved to cook. Throughout my life, I was exposed to a variety of exotic flavors that inspired me to pursue a career as a chef. At the resort, our facilities are state-of-the-art and we have incredible access to a variety of local ranches that allow us to deliver award-winning dishes to our diners. Whether it’s local Koosharem trout, elk or produce, we love providing our guests with innovative dishes that utilize the finest ingredients Utah has to offer.”

Jean-Georges’ Signature Tuna Tartare

After studying nutrition at Michigan State University, Wiener relocated to Florida to study at the prestigious Le Cordon Bleu College of Culinary Arts. Wiener’s fine dining experience has taken her to Georgia, Michigan and Florida before relocating to Park City to further her career at The St. Regis Deer Valley.

“Rachel’s dedication to quality and creative approach in the kitchen made her a natural fit for The St. Regis Deer Valley,” said hotel General Manager Edward Shapard. “We are delighted to be able share her talent with our guests.”

Rooted in slow-cooked, farm-to-table fare, J&G Grill features the highest quality, locally sourced ingredients. The restaurant combines a curated selection of Jean-Georges’ greatest appetizers, side dishes and accompaniments from his portfolio of domestic and international restaurants around the world.
