The Next Course Cooking Class Summer Series Kicks Off

The culinary minds behind two popular Park City food companies have just released their lineup for The Next Course cooking classes. Chef Deanna Fitchat of DeeLicious Park City will create the recipes and teach the classes, while Jessica McCleary of Mountain Town Olive Oil, orchestrates and puts on the series in her spacious shop on historic Main Street.
Each class is thoughtfully designed to dig deep into the food and flavors of different regions of the world, featuring three to five courses with wine pairings. For this summer’s line-up, McCleary tells Dishing that they focused on seasonality — meaning, what people want to cook at certain times of the year.
“For instance, our Make-Ahead Camping Meals will focus on creating dishes that you can take camping with you. Or our Paris Bistro class will happen right before Bastille Day. As always, each recipe will feature ingredients that are seasonal and fresh, making it easy to make these same recipes at home.”
Plus, guests will pick up helpful tips and ways to utilize the many varieties of olive oils and vinegars in the shop, as well as general cooking tricks from Chef Deanna. “Jessica and I choose seasonal and cultural topics, and then I get to incorporate the huge variety of olive oils, vinegars and spices Mountain Town has in the shop to build enticing menus and unique recipes,” Deanna says.
The Next Course Cooking ClassThis summer’s schedule is packed with an incredible and diverse range of classes. To name just a few classes — and recipes — on the lineup that caught our eye:

May 4: Cinco de Mayo

  • Mini shrimp tostadas with fresh guac
  • Barbacoa short rib tacos with cilantro slaw
  • Easy chicken enchiladas verde
  • Tres leches cake bites

July 12: Paris Bistro

  • Leek and mushroom tart
  • Warm goat cheese and Mesclun salad
  • Steamed mussels with fennel and leeks
  • Strip steak frites with Bearnaise
  • Raspberry millefeuille

July 26: Regional Italian — Veneto

  • Baccala mantecato (salt cod spread) on polenta
  • Risi e bisi – Venetian style risotto
  • Bignoli en salsa – Savory spaghetti style pasta
  • Gamberi all busara – simmered shrimp in tomato and garlic sauce
  • Espresso vinegar spiked Tiramisu
Also of note with this class: McCleary just completed the Northern Italian Wine Scholar class, which gives her an expert on the wine pairings for this cuisine!
