We had the pleasure of spending some time with Marlene Duke: the new pastry chef at St. Regis Deer Valley, asking her about her choice to move to Park City and join the St. Regis team.
What brought you to St. Regis Deer Valley?
I’m from Los Angeles, and went to school at Le Cordon Bleu for culinary arts. I met my husband in California before we moved to Dallas, where I honed my pastry profession.
Why did you chose to go into the pastry profession?
I always had an interest in pastry. In a previous restaurant, the pastry chef left unexpected and the opportunity presented itself. I loved the challenge and never looked back at culinary.
What is your favorite part about the sweetest course on the menu?
My favorite thing to do is watch people take the first bite. I love seeing their reactions of indulging into my desserts. And I am a chocolate lover. I could never say no to chocolate.
What is your favorite go-to sweet treat when you are at home?
Starbucks frappuccinos! People would say I drink at least one a day. I also love fudge brownies and Hawaiian shaved ice.
What do you like to do for fun in Park City?
There’s so much to do here, but I love to hike. I didn’t grow up with seasons, and I’ve had the pleasure to see Deer Valley in winter wonderland, wildflowers, and the turning of the leaves.
How would you like to elevate the St. Regis?
There are numerous things we are talking about bringing to the hotel: wedding cakes, bar edibles, modern style plating and more seasonal products using local ingredients. Stay tuned for more sweet concoctions!
