Why We Love It: When it comes to ramen, this is the real deal. Chef Mike Harrison trained under legendary Tokyo ramen chef Koitani. The broth has been pressure cooked with 145 pounds of bones, over a three-to-five day process. Ingredients are local and seasonal when possible, including partnerships with Wasatch Meats and Mary’s Free Range Chickens. Hana Ramen will warm your soul!

The Twist: Just like Nona used to make, for those lucky enough to have an authentic Italian Nona! For the rest of us, the restaurant has crafted an authentic experience – hand-made ravioli bursting with spicy sausage, mounded up high with sun-dried tomatoes, garlic, olive oil, fresh tomatoes, black olives and a sprinkling of chili.

The Twist: Nothing compares to home-made pasta, and you can learn to make perfect noodles or ravioli with chef Linda Elbert Of Mindful Cuisine. Elbert has several public classes coming up, including Night In Italia on Feb. 25 from 6 to 9 p.m., which may include pasta making (book at least seven days in advance). Call 435-243-5787 to ask about private classes. If you are scrambling for a last-minute holiday gift, a cooking class is a great option.

What We Love About It: Chef Linda’s classes are educational, a great place to meet people (enjoy the feast after preparing it in class!), and delicious to boot. Not all classes include pasta, but if they do, the pasta-making is everyone’s favorite part.
