Start your day on the right foot, with the protein, but minus the meat, with the tofu scramble from Squatters

Squatter’s Organic Tofu Scrambler


  • 3/4 cup celery, minced
  • 3/4 cup onion, minced
  • 1/2 bunch fresh Italian parsley, minced
  • 1/2 tablespoon fresh garlic, minced
  • 1/2 tablespoon canola oil
  • 1/2 tablespoon olive oil
  • 1/2 cup vegetable stock
  • 1/2 teaspoon black pepper
  • 1/2 tablespoon onion powder
  • 1/2 teaspoon thyme
  • 1/2 teaspoon blackening spice
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon tarragon
  • 12 ounces firm tofu, strained


  1. In a deep saute pan, saute all ingredients, except tofu, until onions soften.
  2. Crumble in tofu and simmer for an additional 20 minutes until cooked through.
