Ingredients
- 1 cup green zucchini
- 1 cup dried chickpeas
- 2 tablespoons tahini
- 2 teaspoons lemon juice
- 1/2 teaspoon salt
- 3 garlic cloves
- 1/2 cup olive oil
- 1 tablespoon parsley, chopped
Instructions
- Seed the zucchini, then soften in a pan over medium-high heat to give it a little color, being careful not to cook through.
- Simmer chickpeas in a saucepan with water until soft, and then cool.
- Add all ingredients to a food processor, pulsing into a creamy consistency.
- Season to taste.
