Last week we attended the highly anticipated Deer Valley Winter Menu Tasting for the 2015-16 ski season. Every year Deer Valley Resort unveils their culinary plans for the season by featuring samplings from their many dining options, and at Deer Valley Resort dining is an integral part of the ski experience. This year’s tasting did not disappoint as we sampled tastings from the Silver Lake Restaurant, Seafood Buffet, Royal Street Cafe, Silver Lake Lodge, The Brass Tag, Fireside Dining, The Mariposa and Deer Valley Grocery Cafe. Let’s just say, the ski season never tasted so good.

At Silver Lake Restaurant you can enjoy a mid-mountain gourmet lunch, and last week they highlighted offerings from their taqueria with a selection of street tacos. With options of mole wagyu beef, lime and cilantro shrimp and Niman Ranch pork carnitas with a variety of toppings including grilled pineapple salsa, red chile mayo, pickled red onions and cilantro all served on fresh white corn tortillas. We think making turns and eating tacos will go perfectly together.
Royal Street Cafe is located mid-mountain at Silver Lake Lodge and serves award-winning cuisine. We got a taste of their new roasted butternut squash, red quinoa, Meadowlark brie and kale salad, which was light and satisfying. The whole time we kept asking ourselves, “Seriously, why isn’t brie on more salads?”
The famously abundant Seafood Buffet located inside Snow Park Lodge features fresh sustainable seafood, specialty entrées and delicious desserts. Winning for the most unique presentation, we were served a seared sea scallop on a pink Himalayan sea salt block (which was pleasantly warm to the touch). Accompanied with fresh veggies including kale and mushrooms that taste like bacon (!), this will be a must-catch dish.
The Silver Lake Lodge is where we think we’ll be headed first on a cold day on the slopes. Now skiers can warm up at the new Bald Mountain Pho bar offering custom Vietnamese pho bowls with all your favorite add-ins. Offering beef and vegetarian options, this pho was nothing short of pho-nomenal.
The Brass
Tag is located in the Lodges at Deer Valley and features Deer Valley-inspired brick oven cuisine. They featured a play on chicken and waffles with a harissa-rubbed cornish game hen and sweet potato waffle served on lime yogurt cream. A dish hearty enough to fulfill a ample appetite after a long day on the mountain.
Fireside Dining
is always a unique dining experience featuring local favorites from the European Alps served in four courses from five stone fireplaces. Their Niman Ranch lamb rack will feed the biggest appetite with an addictive piperade polenta and pleasantly citrus micro greens from Strong Vertical Gardens.
Located in Silver Lake Lodge, The Mariposa offers a masterful blend of classic and contemporary cuisine. The chef prepared a comforting dessert with a rustic sweet potato tart and bourbon praline ice cream, we repeat, bourbon praline ice cream.
And when we thought we couldn’t possibly taste one more delicious bite: cue the The Bounty of Deer Valley Bakeries. We ended the night with an impressive display of treats from the bakeries of Snow Park, Empire and Silver Lake Lodges. Feast your eyes on these sweets…
