Happy Meatless Monday.
Heading out for a long hike or bike ride on the PC trails? Consider fueling up with this delicious, satisfying, meatless breakfast of scrambled tofu and shiitake mushroom bacon. This meal is packed with protein, vitamins and flavor. You’ll be surprised how tofu transforms into the texture of scrambled eggs, and how shiitake mushrooms can imitate the taste and consistency of bacon. Add some of your favorite toast and fresh avocado slices, and you’ll be ready to conquer the mountains. Note: I always try to buy my ingredients organic and GMO-free.
Ingredients
- 1 box of shittake mushrooms
- Extra virgin olive oil
- 2 teaspoon smoked paprika
- Salt and pepper
- 1/2 block extra firm tofu, drained and pressed
- 1/4 cup nutritional yeast
- 1 tablespoon Dijon mustard
- 1/2 teaspoon ground turmeric
- 1/4 yellow onion, diced
- 2 garlic cloves, minced
- 1/2 cup shredded cheese (vegan or regular)
- Optional: 1 cup fresh or frozen veggies, chopped (I used frozen broccoli)
- Optional: handful of fresh greens, chopped
Instructions
- Preheat the oven to 350 F.
- Chop the shittake mushrooms and mix on a sheet pan with a drizzle of olive oil, sprinkle of salt and pepper and the smoked paprika. Mix well to coat the shittakes, then bake until dark red and crispy. The timing will vary depending on the size you chopped the mushrooms so it's best to keep a close eye on them. You're looking for an almost burnt result.
- While the mushrooms are roasting, mix together the tofu, nutritional yeast, mustard and turmeric together in a medium size bowl. Season with a sprinkle of salt and pepper.
- Heat a skillet on medium low and add a drizzle of olive oil. Saute the onion, garlic and greens (if using) for a few minutes until the onion starts to soften and the greens begin to wilt.
- Fold in the veggies (if using) and the cheese, and continue to cook a few more minutes.
- Finally, add the tofu mixture to the saute pan, and cook until all ingredients are well mixed and warmed.
I like to serve the scrambled tofu with the shiitake bacon on top, avocado on the side and a couple slices of whole grain toast spread with vegan butter (you can find vegan butter at Whole Foods). Now, put on your sunscreen, fill your CamelBak, and you’re officially prepared to take on some serious mountain adventures.
