Sundance Resort Partners With Vegan Chef to Create Plant-Based Menu Options

Sundance Mountain Resort, with the help of vegan chef and wellness advocate Leslie Durso, will be introducing a variety of plant-based options to their dining outlets. Chef Durso will work alongside Executive Chef Manuel Rozenhal to create unique dishes that will provide options for guests who seek plant-based and allergy-friendly meals, while still maintaining the delicious and satisfying fare that Sundance is known for.

Sundance is thrilled to work alongside Leslie Durso to elevate the culinary offerings at the resort. Sundance has a commitment to the land and environment on which it is built and looks forward to integrating this commitment into our menu options. It is our belief that this partnership will benefit our guests and our land alike.

Leslie Durso is a vegan chef, wellness advocate, and healthy living educator.

Durso, a vegan chef and healthy living educator, with over 22,000 Instagram followers, is the face of a fresher plant-based movement that refuses to compromise style for sustainability. A consulting chef for hotels, resorts, and restaurants around the world, she has always had a meatless mindset, and the greater populace is now embracing her teachings more than ever.

Sundance Mountain Resort and Chef Durso will work together to revitalize current menu offerings and create new options built around the sustainability of food. Some new items expected to reach menus over the next few months include, an appetizer of beet tartare with mango “yolk,” horseradish cream and endive. A main course of artichoke cake with pesto risotto, and red pepper butter sauce, and a dessert of chocolate raspberry cake with raspberry coulis, coconut sorbet, and raspberry glass. New options will be found on menus at the Forbes 4-Star restaurant, The Tree Room, and the Foundry Grill.

I am thrilled to be working with my first mountain resort to create the most vegan-friendly ski resort in the world! The ethos of Sundance completely aligns with my mission of balancing art, nature, and community. The rich lands of Utah have so much beautiful produce to work with, I am so excited to be incorporating as much as I can into my plant-based dishes which are designed to entice even the most meat-loving guests. Through this partnership we are proud to create an inclusive culinary experience to provide delicious dishes for anyone and everyone to enjoy. I believe you do not have to sacrifice anything when eating plant based. I create familiar dishes with new twists that will leave you feeling satisfied with plenty of energy to hit the slopes.
