Located adjacent to the Kimball Arts Center, the industrial-chic space occupied by Publik Coffee Roasters in Park City is the perfect spot to take in some culture while you sip your cortado. Many customers come here for a post-workout pour-over with a friend, or sit quietly in front of laptops to take advantage of the shop’s free WiFi. Or, like me, you can take your latte or single-origin espresso outside to Publik’s dog-friendly patio space.

With Publik’s excellent offerings of cold brews, pour-overs and espresso drinks prettied up with latte art, it makes sense to come here for the coffee. But don’t leave without tasting the toast.

The Publik toast menu ranges from traditional to unexpected, with offerings like the simple toast With butter—whipped butter on organic peasant bread— to pear lavender and blue cheese, a combo of pear lavender jam and crumbled blue cheese dolloped on organic peasant bread. Others include orange habanero and goat cheese; maple syrup and powdered sugar; apricot ginger and cream cheese; avocado, salt and pepper; peanut butter, banana and honey; and cinnamon and sugar on toast, as well as daily specials and an upcoming summer specials menu. Gluten free bread options are also available.

Strawberry Rhubarb Toast and a cortado

For me, Publik’s combination of outdoor seating, serious caffeine and tasty brunch offerings happen to be the perfect post-yoga reward on a sunny wednesday afternoon. Order from one of Publik’s helpful baristas, choose a seat, and wait five or so minutes for your snack. I diverged from my usual avocado toast order to go with the strawberry rhubarb and cream cheese paired with a cortado. This sweet toast starts with a generously thick slab of local Red Bicycle Breadworks Power Bread (a hearty bread packed with cranberries, seeds, cocoa nibs, and sprouted spelt), lightly toasted and slathered with cream cheese and strawberry rhubarb jam. It’s hard to just have one slice.
