Sustainability is a priority at Waldorf Astoria and all Hilton resorts with the “Travel with A Purpose” Program at the center of their progress plan. By 2030, Hilton has committed to cutting their environmental footprint in half by doubling their investments in this area and through responsible hospitality.
At the center of local sustainability is Waldorf’s restaurant Powder. A big advocate for these efforts is the restaurant’s Executive Chef, Hermann Schaefer. Chef and his team source ingredients locally and operate the restaurant 90 percent plastic free.
We accompanied Chef Hermann to Park City Farmer’s Market and learned what he looks for and why to create cuisine at Powder.
