The Mindful Cuisine

Learn to cook delicious food in a comfortable setting with a spectacular view! We’ve selected a variety of classes from our Prix Fixe and Fundamental Kitchen Skills offerings, and added them to the calendar as public events. You’ll meet new people, create a meal designed by Chef Linda (or guest chef), and enjoy restaurant-quality food with your fellow attendees (new friends?).

The description for each class will indicate if you’ll prepare items to sample and take home (e.g., a canning, baking or pickling class), or if you’ll prepare and share a full meal together.  After each event, we give you recipes and tips to recreate the items at home.

After you don your aprons, you will receive an overview of the class, ingredients, and preparation techniques. You may then divide into teams to work on different items or all work together, depending on the class and the size of the group. Throughout class, the instructor will draw your attention to key techniques or moments in preparation as they occur. You’ll be able to take the recipes from class with you to recreate at home.

Teens are welcome to enroll in specified classes when accompanied by a paying parent. Currently we do not offer these events to younger kids, but they are welcome to enroll for private events.

We require enrollment at least 5 days before a class, so we have enough food for everyone!

March 18, 2022 6pm Spanish Tapas Dinner

Tapas are the small dishes served with drinks in Spanish bars. They are served one at a time and classically are just a bite or two for one or two people. While certain dishes are typically served in a tapas bar, a tapas can be anything. The most defining characteristic is that the dishes are made from ingredients that are local and in season.

In this dinner, you will make a collection of traditional and modern Spanish-style dishes using seasonal ingredients. Tapas dishes will be served on shared platter for your group to enjoy. Each platter will contain a full portion for each guest, and the dishes you make will collectively form a delicious meal. For the complete experience, bring a Spanish wine such as Tempranillo or Garnacha (Grenache) or a Spanish sherry.

Banderillas (pickled items) and Smoked Paprika Almonds;
Ajo Blanco – White Gazpacho with almonds and grapes;
Baked Mushrooms with Manchego Béchamel and Fennel Salad
Crispy Meatball with Salad Verde
Open Face Crab Empanadas
Spanish Tortilla with Artichokes, Serrano Ham and Goat Cheese

April 1, 2022 6pm Spring Greens with Grilled Chicken and Pecorino “Soufflé”

Each year I look forward to making this dinner. The menu is from a pop-up restaurant, The Basement Table, that I ran with another chef for a couple of years before leaving California. It celebrates the bright fresh flavors and colors of spring. We start with a delicious snap pea salad served with crostini. A boned, grilled mustard chicken is served over a Pecorino pudding which is light like a soufflé, but without the scary “rising and falling” part; and topped with a soft “egg on top” courtesy of Mindful Cuisine’s own chickens. For dessert, a beautiful and delicious Strawberry and Chocolate Pavlova

April 8, 2022 6pm Grilled Halibut with Fregola Sarda and Salsa Verde

This is a bit of an eclectic menu, but the flavors work together. It features a variety of Italian elements, while incorporating emerging spring vegetables and herbs. We will start with a variation on shrimp cocktail – Shrimp Cocktail alla Puttanesca, a sauce that adds a bit of spice and house-cured olives. Enjoy an Italian-American version of a wedge salad. The fish entree (Halibut or best choice based on market availability) will be grilled and served over fregola, a Sardinian pasta, with seared tomatoes, onions and ricotta salata, topped with Italian salsa verde and side of charred broccoli. For dessert, Blood Orange Tiramisu.

April 15, 2022 6pm Spring Lamb Dinner

Winter in Park City has been incredibly mild, but now that spring has officially arrived, it is okay to be happy when the sun shines, making the days warm. This is Mindful Cuisine’s first dinner of spring, and we will celebrate with a beautiful slow-roasted rack of lamb in a pistachio and herb crust, served with lots of spring vegetables!
