Mindful Cuisine: Swedish Comfort Food

When I was very small my Swedish grandmother lived with us. I have only recently realized her influence on our family food and cooking as I have read about Swedish food and culture as interest in Hygge has spread beyond Scandinavian boarders. The small “open faced” sandwiches, seafood salads, kohlrabi, and the caramel almond torta and yes, the so delicious Swedish meatballs on this were all part of my family cuisine. I hope you will enjoy learning to prepare them in this class!

MENU
Appetizer: Shrimp and Dill Toasts – Small rye toasts with shrimp and dill salad in lettuce cups
Salad: Kohlrabi, Pomegranate, Walnut and Rye Grain Salad – in Danish, the word kohlrabi means “glass cabbage” because the of its transparency when peeled. Cooked rye grain is toasted with arugula, thinly sliced kohlrabi, pomegranate seeds and toasted walnuts and tossed with pomegranate molasses dressing.
Entree: Swedish Meatballs in a traditional sauce with mushrooms served with a potato puree and lingonberry sauce
Dessert: Toscatarta- Caramel Almond Torta
