With two early storms in the books, snow conditions on the mountain are proving again why Park City is the best ski town in the country, and the culinary scene is keeping pace. We sampled a few of our favorite digs to bring you the local hot spots debuting new winter menu items fit to wrap up one decade, and ring in the next.
Twisted Fern
Main Street’s cute, but just off piste lies a hidden gem known to locals for its creative combos and seasonal fare. This winter, Twisted Fern’s put their own spin on classic favorites, from fried Brussels sprouts in a honey-dijon vinaigrette with dried blueberries, sunflower seeds and finishing salt, to a Utah trout hash served with red potato-bell pepper hash, broccolini and a poached egg in a lemon caper butter sauce. And don’t forget about their fall squash salad filled with roasted local squash, pomegranate, spinach, savory granola, dried cherries and walnuts, in a maple-chili vinaigrette.
Hearth and Hill
The Kimball Junction restaurant is debuting several new dishes this winter. Check out their Desert Mountain beef cheek tostada, served with a flank steak gyoza, pierogi and cornmeal dusted cuttlefish on rapini flatbread, or sample their Riverence Farm trout, complete with wild rice, celery, citrus and a dill cashew aioli. If you’re in the mood to keep things light, try one of their new winter salads, like the Pyne Farm apple salad topped with walnuts, pearl onions, shallots, arugula, dill goat cheese and a citrus vinaigrette.
Apex, Montage Deer Valley
If you enjoy the feel of classic upscale dining in an elegant atmosphere with a roaring fire, then Apex, at the Montage Deer Valley, is meant for you. This winter, sample their ahi tuna tartare served with an avocado-pea-purée, cucumber, shallots, crème fraîche, crispy masago and nori chips in a soy mustard vinaigrette, or perhaps try their seared diver scallops plated with gold creek truffle cheddar grits, Hobb’s smoked bacon and a pickled grape chutney.
Yuki Yama
With three new menu items, Yuki Yama, one of Park City’s most popular sushi spots, is serving up pairings like red snapper and kabocha, served with fish bone broth, charred garlic oil, ikura and pea tendrils. And if that’s not tempting enough, try their miso mustard arctic char served with grilled mustard greens, fried shallots, smoked salt, miso mustard sauce and seasoned with nikiri, oh, and the clams are back, need we say more?
Daly’s Pub & Grill, Montage Deer Valley
Keep things casual while you crush your big brother in a game of Foosball at Daly’s Pub and Grill, one of the best spots in Deer Valley for relaxed dining in a cozy atmosphere. This winter, they’re debuting their new pork osso bucco, served with roasted carrots, cipollini onions, herbed whipped potatoes, apple butter and a touch of fennel. Craving something a bit more…western European? If so, brats and potatoes are the best way to punctuate a long day on the slopes, served with mustard seed sausage, warm German potato salad, crispy onions, garlic confit, sweet onion and finished off with an amazingly delicious crème fraîche.
Yama Sushi, Montage Deer Valley
Sushi in the snow might sound like a risk, but with some of the best sushi restaurants in the country located within striking distance of your next diamond run, you can bet your ski togs aren’t the only thing that’s fresh this winter. Ask for Yama Sushi’s Mogul Roll, served with bigeye tuna, mango, red pepper, avocado, honey, truffle tare, toasted coconut and roasted pistachios. Looking for a new twist on sliders? Try their Wagyu Brisket Bao Bun filled with pastrami rubbed brisket, umeboshi plum dressing, kimchi and pickled cucumber.
