Snowbasin Resort Revamps Culinary Offerings

Skiing and food absolutely go hand-in-hand and resorts have really seemed to be stepping up their culinary game to ensure their guest have the best visit possible. An example of this is Snowbasin Resort, located in Huntsville, Utah. Roughly an hour from Park City, and part of the Epic Pass family, you may want to plan a visit to experience what the mountain has to offer.

In March, Snowbasin welcomed new food and beverage director Alan Dickerson and executive chef Nick Davies. Both have broad experience working within the ski industry–most recently coming from Snowbasin’s sister resort Sun Valley.

The team got to work revamping both menu options and dining experiences overall. Some of the more notable changes are the full renovation of Earl’s Lodge. The remodel improved flow for guests and added a craft beer and pastry station.  Talking with Chef Davies, it was apparent how passionate he is about joining the Snowbasin team to elevate the dining experience–which he felt had gotten stale over the years.

Davies has being working in ski resort cuisine for years, but also did 12 years as a traveling chef. Some of his travelings included cooking in souteast Asia. Many of the new menu options at Earl’s Lodge, like Vietnamese pho, Thai salad, Korean fried chicken, were inspired by what he learned there. Another special touch Davies added to the menu was his mother’s Bolognese.

Another unique change is the addition of staple food stations at each of Snowbasin’s stunning lodges. John Paul Lodge, located on the top of John Paul Express Lift, is Bavarian themed. Towering rocky mountain views from the dining area definitely makes it feel like you’re on Barvarian ski slopes. Food options that include a Belgian waffle station (now open all day), giant Bavarian pretzel, jalapeno cheddar sausage and waffle and schnitzel, really top off the experience.

At Needles Lodge, located at the top of Needles Gondola, enjoy a menu of items that include pork al pastor and chimichurri chicken. Cinnabar, located at Snowbasin’s base, is the primary apres spot, with new menu items like salmon picatta and orange and pomegranate steak frites. Cinnabar also offers free live music on Friday, Saturdays and Sundays.
