It’s easier than ever to find meatless options now, even at the base of Alta Ski Resort. We went to this ski haven over the weekend and were pleasantly surprised by the veggie burger option at the Goldminer’s Daughter Lodge right by the base of the mountain next to the Wildcat and Colins lifts. The vibe here is super laid back and casual, but something about this veggie burger was just luxurious to me. The burger is made in-house with sweet potatoes, quinoa and black beans. The perfect dollop of corn salsa, accompanied by a side salad and warm, soft pita bread made this lunch a home run.
Add to the scene some sunshine and a pitcher of Cutthroat that accompanied the burger, and now we’re in skier-lunch-heaven. Alta Ski Resort is located about 45 minutes from Park City, but it’s an enjoyable scenic ride through Parleys Canyon and then climbing up Little Cottonwood Canyon. But sorry snowboarders, this mountain is skiers only. Cheers!
