New this season: Cast and Cut
New this season to Deer Valley, Cast And Cut offers an enticing seafood and steak menu, including oysters, mussels, lobster and, of course, local trout. The full bar’s absinthe experience will delight and start the party. Start with butter pop rolls (to die for!) and seafood chowder, enjoy a crisp steakhouse wedge salad, then dive into a bison fillet or elk chop. The seafood towers are impressive! Cast And Cut can also accommodate large groups.
The Mariposa
The Mariposa in Silver Lake Lodge offers Deer Valley’s premier tasting room dining experience. A six- or eight-course dinner is a treat for a special occasion. Local and seasonal ingredients are featured in each carefully curated menu, and wine pairings and cocktails are available to accompany the dining experience. Guests of The Mariposa are offered complimentary underground parking. Advance reservations required.
Cena Ristorante
The finest Italian cuisine can be found at Cena Ristorante at The Chateaux Deer Valley. A family-style breakfast for two is included with every stay at The Chateaux, and full-service lunch, après, dinner and in-room dining are offered. The dinner menu begins with antipasti, followed by entrees like fresh pasta, risotto, lamb shank with polenta or chicken parmesan. There is also a fantastic kid’s menu, with options like pepperoni pizza, spaghetti and meatballs and vanilla ice cream with chocolate sauce.
RIME at St. Regis
RIME is the signature restaurant at The St. Regis Deer Valley, serving up traditional American cuisine in a elevated setting. Diners can enjoy seasonal ingredients, sustainably caught seafood and prime cuts of meat, as well as their choice from the 10,000-plus bottle wine cellar. The menu changes to adjust to seasonal availability and featured ingredients, but a few samples from the elegant menu include starters like caviar, truffle cauliflower soup and hot buttered crab toast; entrees such as gluten-free pan roasted sea bass, seared scallops, Idaho trout, prime New York strip steak and even a 48-ounce dry aged Nieman Ranch Pporterhouse. The Brass Tag
The Brass Tag in the Lodges at Deer Valley is where you can find fine Italian dishes with the highest-quality ingredients. Dine in and take out are both good options! Dinner is served from 5 to 10 p.m., and includes favorites like calamari fritti, classic Caesar salad, red wine-braised ox tail with handmade pasta, Vongole (squid ink pasta with shellfish in white wine butter sauce) and a variety of pizzas (try the prosciutto and blackberry or pesto with shredded chicken and pomegranate). Desserts to save room for include the cannoli sundae, cast iron cookie skillet or blood orange olive oil cake. You can order any salad, pizza or dessert to go, or even build-you-own pizza. Ask about vegetarian, vegan or gluten-free options.
Fireside Dining
What’s perfect after a long day on the slopes? A European-style meal that will make you feel like you’re in the Alps. That’s what’s in store for diners at Fireside Dining. A four-course meal begins with everyone’s favorite snowy-day starter: raclette cheese served straight from the stone fireplace, where the cheese has been melted to gooey, bubbly, hot goodness. A full salad station offers fresh choices like gem salad, roasted Brussels sprouts and curry coconut soup. Follow that with seared duck fricassee, veal and mushroom stew or a roasted leg of lamb. Dessert is fondue. There is a full bar with specialty cocktails, as well as a generous selection of specialty wines and imported beers.
