The Lodge at Blue Sky Presents Four Course Tasting Menu This Friday

Led by James Beard Award-Winning Executive Chef, Galen Zamarra, The Lodge at Blue Sky, a private 3,500-acre ranch near Park City, invites Utah locals and Lodge guests to an exclusive four course tasting menu this Friday, Oct. 23 at 6 p.m. For $285 per person, guests will enjoy mountain luxury at its finest with innovative wine pairings from Vice Versa Wine, of Napa Valley.

Executive Chef of Yuta, Galen Zamarra, has created an inspired menu of refined mountain cuisine including local Utah lamb, and locally sourced seasonal ingredients. Guests will sample a selection of five Vice Versa Wine’s, including a classic pairing of tempura lobster and Chardonnay. Enjoy single vineyard and blended Cabernets, and flavors from Park City Creamery to pair with the Napa Valley Cab. The evenings dinner will conclude with a variety of desserts including honey, caramel, and bourbon truffle macaroons.

From the roots to the vine, was the thought behind the tasting menu. Not using insanely elaborate ingredients but focusing on very individual ingredients.

Beginning with some of the most highly acclaimed vineyards in the world and ending with the best barrels after a 22 month aging process, Vice Versa Wine is crafted into fine, world-class wines that are distinctive expressions of their regions. During the growing season, the strongest vines are identified to isolate the fruit at harvest. The fruit is picked just as it achieves phenolic maturity while the flavors are ripe but still fresh. It is from these sorted clusters, that only the ideal berries make it to fermentation.

Wines that are hedonistic and seductive, but so authentic they speak of their grape varietals, individual vines, soils, climates, and the people who help create them.

Chef Galen specializes in enriching clients’ experiences based on his passion for sustainability, and his inspiration for incredible ingredients found throughout the lush mountain landscape. His cuisine is one that celebrates our love of the land.

Prior to accepting his role at Yuta in 2019, Chef Zamarra was Chef/Owner of Mas, a French American restaurant located in the heart of New York City’s Greenwich Village. He has previously worked under esteemed chefs David Bouley and Alain Passard.

The Lodge at Blue Sky, a member of the Auberge Resorts Collection, invites locals and guests alike to dine in several outlets including breakfast at The Tavern, a secret cabin dating back to the late 1800s, late-night snacks beside a crackling fire or an elegant multi-course feast on Yuta’s terrace amidst dramatic views of Alexander Canyon.
