Whether it’s the stress of the current state of our world or the boredom of having to stay home, we all may find ourselves snacking a bit more these days. I mean, how are we going to avoid overeating at home when we have a kitchen fully stocked with quarantine goodies?! We thought we’d share one of our favorite healthy go-to snacks: Fairweather Nature Food’s Coconut Snowballs. Gluten, dairy and refined sugar-free, they are a great healthy alternative to grab on your quick kitchen roll-bys.
Ingredients
- 6 cups shredded coconut
- 1/4 cup liquid coconut oil
- 1/2 cup agave
- 1/2 cup coconut cream
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
Instructions
- Combine all ingredients in food processor.
- Once blended, roll into 1-inch balls.
- Roll balls in shredded coconut until covered.
- Enjoy!
