Meatless Mondays – Shakshuka

Welcome to Meatless Mondays, where we are hopping on the trend to show you not only great vegetarian and vegan options in the Park City area, but also how skipping meat one day a week can be good for you. Our first weekly feature is shakshuka, a recent Middle Eastern food trend popping up on menus across the country, including several spots in Park City.

Shakshuka, or shakshouka, is a traditional dish of eggs poached in spicy tomato sauce, that is found in many versions across the Middle East and North Africa. It is one of the most loved foods of Israelis, and it was actually brought to Israel by Jewish immigrants from North Africa. Residents of Tunisia, Israel, Libya and beyond have been starting their day with this hearty dish for hundreds of years.

The essence of the dish is a one-skillet recipe of eggs baked in a vegetarian stew of tomatoes and peppers, spiced with onion, cumin, paprika and cayenne. The eggs should be served poached golden in the spicy tomato sauce, best with a pile of pita, toast or challah served on the side. The dish is really versatile, and if you decide to have a non-meatless Monday, you can add some tasty meat into the mix like sausage or diced chorizo.
