The Nelson Cottage by High West offers their specially prepared prix fixe dinner menus on Friday’s, Saturday’s and Sunday’s all summer long! Seasonal dishes are carefully crafted by High West’s culinary team with optional (but highly recommended) whiskey pairings, too.
This season, enjoy menu items such as duck confit, Maine lobster on sweet gem lettuces, striped black bass and leek fondue, shiitake mushroom and truffle mac n’ cheese, maple and brown butter roasted brussels sprouts, elk bourguignon and warm chocolate and cara cara orange cake for dessert.

We also were lucky enough to snag the recipe for the well loved Truffle Mac & Cheese when we sat down with the team from The Nelson Cottage.
Ingredients
- 1 tablespoon olive oil
- 1 cup Pecorino cheese
- 1 tablespoon chopped shallots
- 4 cups cooked Cavatappi pasta
- 1 cup roasted Chantarelle mushrooms (sub Shiitake if not available)
- 1 cup heavy cream
- 1/2 cup fine chive
- 1 teaspoon truffle oil
- 1 large truffle
- salt
- white pepper
Instructions
- Place olive oil in a 4 quart heavy bottomed sauce pot on medium heat. Add mushrooms and shallots.
- Sauté for 2 to 3 minutes, add in heavy cream, and bring back to medium heat.
- Add pasta and cheese and reduce heat. Add pinch of salt and white pepper
- Cook until cream has reduced slightly and turn to low. Add truffle oil and chive.
- Stir until all ingredients are combined and transfer to a serving bowl.
- Top with desired amount of shaved truffle and enjoy!
