Sundance’s Bearclaw Supper Club, A Breathless Dining Experience

You arrive at Sundance Resort and are led to the chairlift where you are greeted with waters and smiling faces. You hop on and are drifted up into the depths of Sundance Resort’s sublimely beautiful scenery, and suddenly you feel farther than you’ve felt in so long and it was only a 40 minute drive. The chairlift ride alone has you in the clouds (literally) but after switching chairs, and finally reaching the destination of the Bearclaw Lodge at the tippety-top of Sundance Resort, you are almost not ready for what’s to come. As you are escorted to the lodge, there are small bites of delicious hors d’oeuvres that await you. Puff pastry with fresh goat cheese and strawberry and bites of smoked salmon and cucumber are the perfect little nibbles to prepare you for what’s to come around the corner. Up the steps and into the outdoor dining area and you really can’t help but gasp and mutter out loud, “Oh my god.”

The view is extraordinary, and right in front of it stands the most gorgeous spread, overflowing with local cured meat, cheeses and artisan breads that are just begging you to dive in. Live, light guitar music soothing your ears and bartenders at the ready to take your drink order as you walk toward it all with your mouth wide open. It’s stunning. Small lights are hung above the dining tables for when the sun goes down, and you settle in, soaking it all up as you take way too many photos of the spectacular 360-degree views of Heber and Utah valleys and the surrounding Wasatch Mountains.

This is Sundance Resort’s summer Bearclaw Supper Club. This year marking only the second year in which this event has taken place, it is one of the most unique dining experiences I’ve ever had the opportunity of attending. There are two different types of summer dining events at Sundance. One being the chef’s seated tasting menu consisting of the set up described above followed by a seated, elegant six-course menu, with the menu changing for each event. There is also the Supper Club Soiree, a sparkling reception-style supper club with passed heavy hors d’oeuvres, live music and special action stations where chefs prepare savory dishes before your eyes. So, a bit more like a party. Both are unforgettable experiences and I provide my hands down absolute highest recommendation in attending either of them. The next upcoming dates for each event are:

Bearclaw Supper Club Seated Tasting Menu: July 25 and August 29

Supper Club Soiree: This Saturday (July 11) and August 15

“The idea behind these events are to experience Sundance and Bearclaw in a different setting. We really want to showcase our culinary talent and provide a taste of Sundance with different menus at each event. ” Steve Solomon, director of food and beverage.
