I like whiskey at the bar, at home and, of course, at High West Saloon. There is something about drinking whiskey at High West that makes you feel good, and special. Now High West is offering yet another place to enjoy whiskey, and feel extra special.  The Nelson Cottage is just two doors up from the saloon on Park Avenue and is a more intimate setting offering multi-course whiskey pairing communal dinners.
“There’s no better way to learn about whiskey than to pair it with food,” said owner David Perkins. And learn you will. The meal is directed course by course, pair by pair by your captain and whiskey expert Terry Ginsberg. From beginning to end, Terry walked us through the whiskey adventure. Chef Ashley Chapman also joined in for each course, explaining his process and all the behind-the-scenes whiskey that was also used in the kitchen.
The menu each night is the chef’s choosing, our menu included sage and local cheddar brioche, bone broth, wild rabbit and ham hock terrine, poached and seared Scottish salmon, coffee roasted bison tenderloin and date caramel cake. And let’s not forget about the pairings. Our courses were paired with champagne, High West Double Rye!, High West Barrel Aged Boulevardier, High West Campfire, High West American Prairie Bourbon and High West Yippee Ki-Yay.
But wait, there’s more. They had a surprise for us just as we thought the meal was over – dry ice over citrus fruit to create an aromatic smoke that swept over the table, while creating the most pleasing finale to a meal I’ve ever experienced. I wasn’t sure if I should close my eyes like I was at a spa or shoot a video so I tried to do both which was not great for the shot.

The Nelson Cottage by High West offers a six-course pre-fixe dinner, with a menu of the chefâs choosing in a communal dining setting on select nights throughout the winter.
