The Protein Foundry Opens Its Doors at Kimball Junction

Great news for health-minded foodies: There’s a new spot to get your smoothie, bowl or toast fix in Kimball Junction. The Protein Foundry has just opened the doors to its Park City store, located at 1784 Uinta Way in the same shopping center as Vessel Kitchen and Park City Coffee Roasters. (Other locations can be found in Cottonwood Heights, South Jordan and Draper.)
The Protein Foundry is designed to be the “best place to fuel your mind, body and soul.” The cute, casual restaurant serves healthy, wholesome food using only high-quality, all-natural ingredients, and avoids added sugars and syrups. The menu features four main categories: açaí and pitaya bowls, Greek yogurt bowls, protein “shakeouts” and gourmet toasts. All are great options for a nutritious lunch or breakfast on the go. The Protein Foundry - Acai BowlIf the words açaí and pitaya don’t ring a bell, allow us to explain.​ Açaí berries are one of the best super foods around. High in antioxidants and fiber, these berries are blended up into a smoothie-like consistency to deliver tons of health benefits in a delicious way. Bright-pink with a refreshing flavor, pitaya is also known as dragon fruit. It’s high in antioxidants as well as Vitamin C — perfect for boosting your immune system this time of year!
The Protein Foundry BowlsAccording to the manager, one of the most popular açaí bowls at the Protein Foundry is the Rio, a blend of organic açaí, strawberries, blueberries, banana and unsweetened almond milk, topped with organic hemp granola, banana, strawberries and blueberries. If you’re a chocolate fiend, go for the “Chocovado” bowl, a blend of organic açaí, avocado, strawberries and cacao powder topped with organic hemp granola, banana, hemp, strawberries, organic peanut butter and cacao nibs.
The protein shakeouts are another popular offering, providing all the nutrients you need to live an active, healthy lifestyle in the mountains. Mounds of Joy sounds especially delicious, with coconut milk, banana, raw almonds, vanilla Greek yogurt, 100 percent cacao powder, almond butter and chocolate whey protein. Or, if you’re trying to keep things clean and green, try the Narrows, a blend of 100 percent orange juice, banana, pineapple, spinach and vanilla whey protein.
The Protein Foundry - ToastsFinally, their toasts also look amazing. They have a selection of savory and sweet options, all served on sprouted wheat berry bread. The Cali is a customer favorite, with cottage cheese, sliced avocado, crushed pepitas, sea salt, crushed red pepper flakes and a drizzle of extra-virgin olive oil.
If you have a sweet tooth, we suggest getting the Red Rocks toast, which is topped with raw honey-infused cream cheese, strawberries, sliced almonds and a drizzle of raw honey.
