Summer is just around the corner, along with the opportunities to enjoy warm evenings to eat outside, fresh produce farmers markets have to offer, and delicious summer bites that go perfect with the season.
We were recently at Promontory Club, enjoying some of the amazing food they have to offer, and we asked for a recipe to share.
Be sure to learn more about this premier four-season community in Park City, but in the meantime enjoy kicking off the warmer months with this recipe.
Ingredients
- 1 cup of almond milk
- 1 Pitaya Foods Organic Dragon Fruit Smoothie Pack
- ½ cup of frozen pineapple
- ½ cup of frozen mango
- 1 cup granola (Promontory uses Bunnery Natural Original Granola)
- 1 teaspoon of shredded coconut
- Strawberries, blueberries, pineapple, granola, and agave for garnish
Instructions
- Blend frozen ingredients and almond milk together until smooth.
- Place 1 cup of granola at the bottom of a bowl.
- Pour blended mixture over granola and smooth the surface with the back of a spoon.
- Add 1 tablespoon of granola over the top of blended mixture.
- Layer sliced strawberries, sliced pineapple, and blueberries on top.
- Sprinkle shredded coconut over the top, drizzle with agave, and serve.
