Editor’s Request: We fell in love with buffalo meat while out west, and I would love to get the recipe that Drafts uses for their chili.
Ingredients
- 1 large yellow onion, diced
- 2 red or green bell peppers, diced
- 1 jalapeño, seeded and diced
- 1 pound ground beef
- 3/4 pound ground bison
- 1 14.5-ounce can diced tomatoes
- 1 15-ounce can black beans, drained
- 1 15-ounce can dark red kidney beans, drained
- 1 tablespoon smoked paprika
- 2 tablespoons cumin
- 2 tablespoons mild chili powder
- 2 teaspoons garlic powder
- 2 teaspoons red chili flakes
- 1 teaspoon cayenne pepper
- 1 1/2 to 2 cups water
- Salt and pepper to taste
Instructions
- In a large pot, cook the onion, bell peppers and jalapeño over medium heat until softened.
- Add the beef and bison and cook until browned, breaking up the meat as it cooks.
- Stir in the diced tomatoes, black beans and kidney beans. Add the seasonings. Pour in enough water to just cover the mixture and stir well. Bring to a simmer and cook for 1 hour, stirring occasionally.
- Season with salt and pepper to taste before serving.
