Editor’s request: Who doesn’t love banana bread? But Overlook really had me at banana bread pudding, if you can get the recipe…
Ingredients
- 3 cups heavy cream
- 9 large egg yolks
- 3/4 cup sugar
- 3 teaspoons vanilla extract
- 1 loaf banana bread
- Ice cream, for serving
- Mint, for garnish
Instructions
- In a large pot over medium-high heat, bring the heavy cream and vanilla extract to just boiling.
- In a separate large mixing bowl, whisk together egg yolks and sugar.
- Using a ladle, slowly incorporate about one-third of the hot cream into the egg mixture, whisking constantly to temper.
- Reduce the heat to medium and pour the egg mixture back into the pot with the remaining cream.
- Cook while whisking constantly until the mixture thickens (about 8 to 10 minutes) to form a crème anglaise.
- Remove from heat and let cool slightly.
- In a large mixing bowl, crumble the banana bread. Add about two-thirds of the crème anglaise, stirring until it reaches a pudding-like consistency.
- Transfer to a 9-by-11-inch baking pan, cover with foil and bake in a water bath at 350 F for 40 minutes to 1 hour, or until firm to the touch.
- To serve, top with ice cream, drizzle with the remaining crème anglaise and garnish with mint.
