Yuki Yama's Baby Back Rib Sauce

Ingredients
- 1/2 ounce ginger, diced
- 1/2 ounce garlic, diced
- 5 ounces mirin
- 5 ounces sake
- 10 ounces tamari
- 1 jalapeño, sliced
- 2 tablespoons cocoa powder
- 2 cups sugar
- Sesame seeds and green onions, for garnish
Instructions
- Add the first seven ingredients to a saucepan over medium heat. Once the mixture begins to boil, add the sugar and stir gently to dissolve.
- Allow sugar to caramelize slightly (mixture will start to thicken), remove from heat and pour over cooked ribs.
- Garnish with sesame seeds and green onion.
